So I am very proud of myself! I fixed chicken fajitas last night for dinner and they turned out great! I didn't really follow a recipe; I just made it up as I went.
1 green pepper
1 red pepper
2 boneless, skinless chicken breasts cut into strips
1 package of fajita seasoning
tomatoes and or salsa
(any other toppings you like)
Spray large nonstick skillet with cooking spray. Throw in chicken strips and brown for 4-5 minutes. Add fajita seasoning (fix as directed on package). I only used half of the package since I was fixing enough for my husband and myself. Add cut peppers and onion. Cook for another 6-8 minutes. Serve on warm tortilla shells with toppings. Enjoy!
(I love my cute apron. Just another surprise from my DH!)
If you have any questions about the recipe, please feel free to email me. Have a fabulous day! Happy cooking!!
