I feel like I haven't posted in forever! I've been a little under the weather these past couple of days, so I have just been resting in my spare time. But I wanted to post the super yummy dinner I made last night for my family and it only needs 4 ingredients! Now that's my kind of recipe! Here it is...
Apricot Chicken
6 tbs apricot preserves
6 tbs russian or french salad dressing
1/2 tsp ginger (optional)
6 boneless, skinless chicken breasts
*Preheat oven to 350 degrees. Combine preserves, salad dressing, and ginger in a bowl and mix well. Place chicken in greased baking pan and sprinkle with salt and pepper. Pour preserve mixture over chicken. Cook for 1 hour and 15 minutes, or until chicken is no longer pink. Serve with rice.
*Since my family is small, we don't use 6 chicken breasts. When I fix this, I use boneless, skinless chicken tenderloins, but I still use 6 tbs of the preserves and salad dressing. When using tenderloins, you only need to cook it for 30-45 minutes. Just make sure they are done. If you have any questions, please feel free to email me.
